I am keeping a track of my chips, and the math does not add up. My imagination?

It should be instant. However the chips in the header shows the chips you have in the bank and does not include the chips you have in play. So whilst you’re playing at a table it would change, only when you leave or join a table or tournament, or use rebuy or add chips to a table. Do you think the value should should all the chips you have including those at the table?
